🧼 fix markdown & formatting errors + readability

- remove `<br>` from markdown
  - converted `<br>` in table to `<ul>`
- fixed incorrect uses of msdocs formatting
- add code formatting to log files for readability
- address acrolinx feedback to improve readability score
